PNG. 4 slices of white bread, soft, 4 eggs, at room temperature, chives, about 1 heaped tablespoon, finely chopped, white pepper, malt vinegar, 1 egg yolk, groundnut oil, or vegetable oil, 1 tsp white wine vinegar, 1/2 tsp mustard powder, salt. We do use raw egg in the recipe.
That's a bit bland for our taste buds.
The recipes i had used for 35 years called for mayo, and that wouldn't work anymore due to the eggs and oil. Egg sandwiches can be a bit one dimensional but this turns up the volume in every way with pickly, salty, crunchy hits in every bite.
